Gluten Free Pumpkin Chocolate Chip Muffins

Equipment

  • loaf pan or cupcake tin
  • mixing bowl

Ingredients

  • 1 Cup sugar
  • 1 ½ Cup gluten free flour
  • 1 tsp baking power
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • Dash of salt
  • ½ Cup vegetable oil
  • 2 eggs
  • 1 can pumpkin pie filling
  • 1 Cup dark chocolate chips

Instructions

  • Preheat oven to 350℉
  • Combine all the dry ingredients in a bowl
  • Add oil, eggs and pie filling
  • Mix ingredients until well combined
  • Fold in the chocolate chips
  • Line the cupcake holders and pour mixture into each holder
  • bake for about 25 minutes or until the toothpick is clean

Notes

This recipe is perfect for a pumpkin loaf as well. Just pour the mixture into the loaf pans and bake. Baking time will be 50 mins for a traditional loaf pan. if you use mini loaf pans, the cooking time would be 25-30 mins.
 
To make this muffin more of a dessert, you could add cream cheese frosting,
1 8oz softened cream cheese
1/2 stick of softened butter
1 cup of powdered sugar
1 tsp vanilla
