⅓Cupcooked quinoai use boil in a bag tricolored quinoa

2eggs
½Cupgluten free bread crumbs
¼Cupminced fresh parsely
3tbsponion powder
1tspCumin
¼tspSalt
1/4tspFresh ground pepper
Sliced Cheesepepper jack, American, Swiss
Instructions
Add water to saucepan and bring to a boil then add the quinoa, reduce the heat to low, cover and cook for 15 min or until fluffy.While the quinoa is cooking add the drained black beans to a bowel and take a fork to smash them and make a semi paste. ( or you could you a food processor) When the quinoa is done. Remove it from the pan and let it cool for 5 mins.Once cool add the quinoa, eggs, bread crumbs, parsley, garlic, onion powder, cumin, salt and pepper into the black beans. Mix until fully combined.Cover and refrigerate for at least 1 hr.Once chilled, form the mixture into 4 patties. Cook on the grill or in a large skillet on the stove. Cook the patties for about 3-5 min on each side or until seared on outside and heated throughout.Top with cheese is desired.
Notes
There will be leftover quinoa. I freeze mine to cut the prep time down for the next time I use this recipe or make it into a side dish for another meal.
