First melt butter in a microwavable safe container. Set aside for a few minutes to cool.
Preheat your waffle machine or skillet if you are making this recipe for pancakes.
Mix the Sugar and Eggs until well combined.
2 tbsp Sugar, 2 Eggs
Mix in the butter
1 stick Melted butter
Add Vanilla Extract
1 tbsp Vanilla Extract
Add the milk and combine
2 cups Lactose Free Milk
Add all the dry ingredients next
1 Cup Gluten Free Flour, 1 Cup Coconut Flour, 1 tsp Salt, 2 tbsp Baking powder
Add all the ingredients together. if the batter is dry add more milk as needed. Coconut flour is very absorbent and usually requires more milk to thin out the batter.
once the batter is mixed you can add your favorite fruit or chocolate chips for additional flavor to the batter.
Spray your pan or waffle maker
Add desired batter amount and cook batter. Repeat until there is no more batter left.
Enjoy your waffles with some fresh whipped cream or fresh fruit on top!
