These Strawberry Pop-Tart cookies are chewy and soft sugar cookies filled with strawberry jam topped with a delicious cream cheese frosting topped with sprinkles.
I am sure you all miss having a natural strawberry-frosted pop tart. Don’t worry; you won’t miss out after you try this cookie recipe. This will taste like a Strawberry Pop-Tart without the Gluten and toxins.
Cookie Ingredients:
- 6 tbsp butter softened
- ¾ cup sugar
- 1 egg
- ¾ tsp vanilla extract
- ¼ tsp vanilla paste
- ¼ tsp salt
- ½ tsp baking powder
- ½ tsp baking soda
- 1 ½ cups cup for cup gluten free flour.
- Strawberry Jam ( homemade or store-bought)
Let’s Make Strawberry Frosted Poptart cookies
These fun and fruity-filled sugar cookies are ready in about 30 minutes!
1. Preheat oven to 350℉. Line the baking sheet with parchment paper or a silicone baking mat.
2. Cream butter and sugar together in a mixer. Add the egg and mix until smooth.
3. Add the Vanilla extract, salt, baking powder, baking soda, and gluten-free flour and mix until combined.
4. Scoop the dough using a 2 tbsp cookie scoop and place on baking sheet.
5. Using a ½ tbsp measuring spoon create a well in the center of the cookie and fill with strawberry jam
6. Fold the edges over and seal well. Roll into a ball. Bake for 10-14 minutes
7. Let the cookies cool completely before topping them with frosting. Top with Sprinkles if desired
Time to Frost
Frosting ingredients:
- 4 oz cream cheese, room temp
- 4 tbsp butter, room temp
- 2 cup powder sugar
- 1 tsp vanilla extract
- 2 tbsp milk
In a stand mixer add cream cheese and butter mix until smooth. Add milk and vanilla extract. Slowly mix in powdered sugar until desired taste.
