This chicken is perfect over salad, served in tacos or a casserole.
Add the dressing to the cilantro lime chicken, tacos, taco bowls or just a simple salad.
This is a great meal prep food for lunches or take to a family cook out.
Cilantro Lime Pulled Chicken

Ingredients
Cilantro Chicken
- 2 lb Chicken Breast
- ½ Cup Chicken Broth Low sodium both
- ¼ Cup Olive oil
- 4 Cloves Minced garlic
- 1 Jalapeno pepper chopped and deseeded if you want it spicy keep the seeds
- 1 tsp Salt
- 2 tsp Cumin
- 1 tsp Paprika
- 1 tsp Pepper
- ½ Cup Fresh Cilantro chopped
Creamy Avocado Cilantro Dresssing
- 1 Avocado
- ½ Cup Cilantro
- ¼ Cup Olive oil
- 2 tbsp Lime juice
- ¼ tsp garlic salt
Instructions
Cilantro lime Chicken
- In a food processor add chicken broth, lime juice, garlic, jalapeno, and spices. Pulse until smooth.Turn crockpot on low and set for 8 hoursPlace chicken evenly on the bottom of the crockpotPour mixture on top of chicken. Spread evenly, turn chicken to coat both sides. Let cook.Once the chicken is done it will need to be shredded. You can shred the chicken by hand or if you have a hand mixer, place chicken in a deep bowl and shred it this way. This has become one of my favorite ways to shred chicken it cuts the time in half if you were to do it by hand. After the chicken is shredded top it with the cilantro.I like to add a little bit of the cilantro into the chicken while it cooks. It gives it a little bit more flavor.

- Place avocado, oil, lime juice, and garlic salt in the food processor.Pulse until smooth
Notes
I find cleaning the inside of the crockpot difficult especially when the sides have burnt on food. Using Crockpot liners has made cleanup easier. Gluten free. Nut free. Dairy free.
